Lavinder has over two decades of experience working in operations and development in restaurants and began his career in financing, according to Lavinder’s LinkedIn profile. He has spent the last couple of years in development, specifically focused on franchise business models. Lavinder succeeds Mark Mele — who was with Paris Baguette for nearly three years before becoming chief development officer at Edible Brands — and started working at Paris Baguette last month.

What’s on Lavinder’s plate: Among Lavinder’s initial challenges will be supporting the chain’s goal of reaching 1,000 units in the U.S. by 2030. The company is on its way to reaching 150 units in the U.S. — it currently has over 4,000 units globally. So far this year, the chain has signed 98 deals and expects a total of 64 new units to open this year. While this amount is less than its expected 96 new openings projected last year, the company will be entering 45 new markets. The cafe chain increased systemwide sales by 42% last year and comp sales were up 31%, which will help attract future franchisees.
In addition to its rapid development plan, Paris Baguette also developed a prototype design under Mele. That design includes updated lighting, a new floor plan and rich colors.
