Rego Restaurant Group, which owns Quiznos and Taco Del Mar, added Vanessa Fox as chief development officer, the company announced Friday.
Fox will be tasked with identifying and pursuing “new opportunities for growth through physical expansions, operational improvements, strategic partnerships and rebranding initiatives,” according to the press release.
This summer, Rego unveiled a plan to expand its footprint through modular units with drive-thrus built in conjunction with BCubed, a firm specializing in the fabrication of modular building components. Those units take up less space than traditional Quiznos and Taco Del Mar stores, topping out at about 650 square feet.
Rego has also been focusing on rebranding the once-struggling sub shop, an effort which has enabled the company to sign several recent expansion deals, including partnerships with former franchisees. Tim Casey, president and CEO of Rego, said the restaurant company will focus on franchisees as it accelerates expansion.
Fox brings considerable restaurant development experience to Rego. As CDO at Zaxby’s, she led the chicken chain to reach 915 units, according to the press release. Fox also worked at Jack in the Box as VP and CDO during a series of sales and rebranding efforts.
